From the vineyard to the table

Cascna Tavjin is a small winery located in the hills of Monferrato near Asti. Since 1908, the family Verrua manages the vineyards and the cellar. Today the direction is carried out by Ottavio Verrua with his wife and his daughters.
Cascina Tavjin works in a natural way and in 2007 the winery has realised the conversion to organic methods.

Recipe:

Chicken Fricassee


ingredients for 4 people

     * 4 chicken breasts
     * 4 chicken livers
     * 2 tablespoons pine nuts
     * 300 grams of peas
     * half an onion
     * parsley
     * broth
     * 2 egg yolks
     * lemon juice
     * salt


preparation

Cook the chicken breasts in hot water for 5 minutes. In a saucepan put oil and fry the onion and parsley.
When the onion is golden add chicken breast, pine nuts and peas.
Cook for 20 minutes at medium heat. Then add the chopped chicken livers and finish cooking for about 10 minutes.
Put in a dish the chicken breasts and all around the chicken livers with green peas.
Add the egg yolks and lemon to the sauce created in the pan during the cooking of the chicken and cook at low heat for about 3 minutes.
Now pour the sauce over the chicken breasts and the pine nuts.

The Ruché is an indigenous and rare variety of grape that grows in Monferrato.
Its name and its origins are still shrouded in mystery for many aspects. The vineyard has probably been imported from Burgundy by the monks, who planted it near the convent of San Rocco in Monferrato Castagnole, building that no longer exists.
Other theories claim that the name "Ruché" derives from "rocks": the grape is in fact able to grow on calcareous and dry soils, with high insolation. For these reasons the wine can be produced only in limited quantities.
